The importance of rice flake powder has gained momentum in the food industry. However, there are only very few manufacturers / suppliers in the B2B segment on the market.
Rice flakes Flour MLF 100 is a pre-gelatinised rice flour made from rice flakes of consistent quality. The starch is partially gelatinised by the hydrothermal pre-treatment. Under 70°C, the flour pre-treated with hot steam already shows a certain amount of cold swelling. It reaches its maximum viscosity earlier than the native rice flour and is also gel-forming.
It is particularly suitable for gluten-free formulations, e.g. for gluten-free noodles, as a thickening agent in soups, as a carrier of flavours or as an anti-caking agent when dry.
