Rickmers rice starch RS 100 is a native rice starch with a fine granulation, a very fine, very white powder. Compared to other cereal starches, rice starch granule are particularly small (3-5µm) with a narrow particle size distribution. They are the same size as fat globules; therefore rice starch is suitable as a fat substitute. Even-non-heated, it forms a smooth texture. The rice starch granules can absorb 20 times the liquid. Rice starch is suitable to replace gelatine in vegetarian products or those that have to meet religious requirements.
